Professor Marco Gobbetti is full professor and Dean of the Faculty of Agricultural, Environmental and Food Sciences, at the Free University of Bolzano, Italy. His research activity mainly deals with the physiology, biochemistry, and use of lactic acid bacteria in sourdough, cheese, and vegetable/fruit and with the human intestinal microbiome in response to dietary habits. As retrieved on Scopus (March 2023), he is author of more than 400 publications, with an h index of 91 and more than 26,000 citations.
